"SPICY ITALIAN SAUSAGE & PEPPER STEW Sausage lovers, this one's for you! Choose mild or hot Italian sausage, as you prefer, and if you wish, serve this savory stew with a sprinkling of grated Parmesan cheese.1 lb. Italian sausage1 lg. onion, cut into 3/4" pieces1 clove garlic, minced1 can (16 oz.) stewed tomatoes, undrained3/4 c. Pace Picante sauce8 oz. mushrooms, halved or quartered1 tsp. dry basil leaves, crushed1/4 tsp. dry oregano leaves, crushed1 sm. red bell pepper, cut into 3/4" pieces1 sm. green bell pepper, cut into 3/4" piecesCut sausage into 1 inch pieces; remove casing. Cook in 10 inch skillet until lightly browned, about 2 minutes; drain. Add onion and garlic; cook until sausage is no longer pink, about 3 minutes; pour off drippings. Add tomatoes, Pace Picante sauce, mushrooms, basil and oregano. Simmer uncovered 15 minutes, stirring occasionally. Add peppers; simmer 5 minutes or until peppers are tender. Serve with additional Pace Picante sauce. Makes 4 servings, about 6 cups stew."

"HOT ITALIAN SAUSAGE AND PEPPERS 6 whole hot Italian sausages2 cloves garlic, minced1 large onion1 green bell pepper3 tbsp olive oilSet the sausages to boil for about 10 min, drain set aside. Chop the pepper and onion in 3/4-1" pieces.Sauté over medium-high heat in a large skillet. Pour in the olive oil, add the diced garlic, peppers and onion. Cook the vegetables just until they begin to soften. Transfer contents of skillet to a large bowl and set aside.Slice sausages into 1/2" thick coins, as you would carrots. Place one more tablespoon olive oil into the skillet and fry the sausages until they are lightly browned along the edges. Stir in the bowl of cooked vegetables and continue to cook on medium-high setting, stirring every 2 minutes for about 10 minutes.Butter some Italian bread and set on the edges of a serving plate.
